Food from the Basque Country Made by a Lovely Caterer
Let’s head to Anglet for new culinary creations made in Basque Country ! And this time we are in the company of Valérie from Baba Lunch Catering, who prepare delicious meals and deliver them to you directly in Biarritz, Anglet or Bayonne.
This creative soul whose passion for the world cuisine suggests homemade meals (and made with lots of love of course). She tries as much as possible to use local, seasonal and organic produce, and offers reusable lunch boxes and cutlery to minimise food waste.
It’s no surprise that our KEYWEEK agency has decided to work alongside Valérie to offer our KEYWEEK guests catering services with healthy menus directly delivered to their holiday homes !
Alright, the wait is over ! Discover these two recipes in the video : Basque Samoussas and Chicken Ballotine with Chorizo.
It sounds absolutely delicious, right ? Needless to say that we were in for a treat ! You can too treat yourselves or your guests for a dinner party at home, or when you are visiting us in the Basque Country in one of our holiday rentals !
Okay, as we are kind and thoughtful, we ask Valérie for her delicious Chicken ballotine recipe :
Basque Country Food : Chicken Ballotine with Chorizo, Mashed potatoes and Pesto Verde
Espelette Chili Powder
To prepare the ballotine
Chop the chorizo and the tomato. Mix them together to make the stuffing for the ballotine.
Notch your chicken breast , roll it out with a butcher’s hammer or the back of a saucepan. Stuff the chicken breast in the incision.
Spread the plastic film on your cooking area and sprinkle some Espelette Chili powder. Put your chicken breast on the film, roll it until you end up with a small sausage-like shape. Safely close the tips of the ballotine.
Boil water in a saucepan. Put the ballotine in the boiling water during 10 minutes over a low heat.
Take the ballotine out of the water and wait a few seconds so you don’t burn yourself. Take the plastic film out and cut the stuffed chicken breast in staggered rows to present it nicely.
For the pesto
Mix the roquette with a few walnuts, and a bit of parmesan cheese according to your taste. Thin down with olive oil until you get a good consistency. Add some salt, pepper and taste it.
For the mashed potatoes
Cook the potatoes in boiling water (with the skin on).
Mash them with a potato masher and add a bit of butter. Season with some salt and pepper.
For the presentation
Arrange the mashed potatoes on the bottom of the plate, add one or two tablespoons of the pesto sauce and place the chicken ballotine above.
